OR6A2 include a variety of aldehydes and esters that are primary components of various fragrances and flavors. Cinnamaldehyde, a key flavor compound in cinnamon, binds to and directly activates OR6A2, triggering the sensory perception associated with cinnamon aroma. Similarly, benzaldehyde, with its distinct almond-like fragrance, selectively activates OR6A2, leading to the characteristic scent detection. These activations are specific interactions where the chemical serves as a ligand, fitting into the binding site of OR6A2 and inducing a conformational change that results in protein activation and signal transduction, culminating in the perception of smell.
