Avidin Activators

Avidin is a protein found in the egg whites of birds, reptiles, and amphibians, with its most well-known source being chicken eggs. The primary function of avidin in nature is believed to be the sequestration of biotin, a water-soluble B-vitamin, which could inhibit the growth of biotin-dependent pathogens.Avidin is a tetrameric protein, meaning it is composed of four identical subunits. Each of these subunits can bind one molecule of biotin with extraordinary affinity, making the avidin-biotin interaction one of the strongest non-covalent interactions in nature. This high-affinity binding is employed in various biochemical assays and biomedical applications, such as drug delivery and targeted imaging.

Avidin is also highly resistant to a range of harsh conditions, including high temperatures, extreme pH levels, and proteolytic enzymes, making it useful in a variety of laboratory and industrial applications.In nutrition, excessive consumption of raw egg whites can lead to biotin deficiency due to avidin's strong biotin-binding capacity. However, cooking denatures avidin, inhibiting it from binding biotin and mitigating this risk.In the biomedical field, the strong binding of avidin to biotin has been used to develop targeted therapies. For instance, drugs or imaging agents can be attached to biotin molecules and specifically delivered to sites of interest using avidin or its homologs.
