1-Stearoyl-rac-glycerol serves multiple functions, playing the roles of an emulsifier, surfactant, and lubricant. In its emulsifier capacity, it effectively stabilizes both oil-in-water and water-in-oil emulsions by impeding droplet coalescence. Functioning as a surfactant, it diminishes the surface tension of water and facilitates the dispersion of insoluble solids in aqueous solutions. Lastly, as a lubricant, it minimizes friction between surfaces and enhances material flow.
