Thaumatin is a mixture of Thaumatin I and Thamatin II reported to be approximately 10,000 times sweeter than sucrose. It is a naturally occurring protein found in the katemfe fruit. It binds to the sweet taste receptors on the tongue, thereby providing a sweet taste.
