QUICK LINKS
Pullulanase is a glucanase that degrades pullulan. It is produced by the Gram-negative bacterium Klebsiella and is used for starch-debranching as well as to study polysaccharide utilization. Pullulan is a polysaccharide composed of maltotriose units linked by α-1,6-glycosidic bonds. This enzyme plays a role in biotechnological and industrial applications by catalyzing the hydrolysis of these specific linkages, leading to the production of maltotriose. It is employed in the production of bioethanol, where it helps in breaking down starches into fermentable sugars, thereby increasing the yield of ethanol in the fermentation process.
