Potassium sorbate is a mold and yeast inhibitor. Used as a fungistatic agent for foods, especially cheeses. Potassium sorbate is a potassium salt derived from sorbic acid. It is widely utilized as a food preservative and stabilizer, typically at an optimal concentration of 0.1%. The concentration of potassium sorbate in samples can be accurately determined using an analytical method that involves its reaction with p-hydroxybenzoic acid (PHBA). Gas chromatography/mass spectroscopy (GC/MS) is used to measure the resulting products of this reaction, namely benzoic acid (BA) and water vapor. In addition to its preservative role, potassium sorbate has displayed anti-atherosclerotic effects by inhibiting cholesterol synthesis. Furthermore, it serves as a corrosion inhibitor through corrosion mitigation.
