Phytic acid is a compound that functions as a chelating agent, binding to metal ions such as calcium, magnesium, and iron. Phytic acid can forming stable complexes with these metal ions, which can inhibit their absorption in the gastrointestinal tract. Phytic acid can also act as an antioxidant, scavenging free radicals and preventing oxidative damage to cells and tissues.
