Octyl gallate (OG) is an ester of gallic acid and octanol, and is a used antioxidant and preservative. It is used in the production of polymers, plastics, and adhesives. It is also known to possess anti-inflammatory, anticancer, antibacterial, antiviral, and antifungal properties. In particular, Octyl gallate has been found to inhibit the activity of certain enzymes, such as cyclooxygenase and lipoxygenase, which are involved in the production of pro-inflammatory molecules. In addition, it acts as an antioxidant by scavenging free radicals and inhibiting the oxidation of lipids.
