Neotame is a synthetic sweetener structurally similar to aspartame, yet significantly sweeter—approximately 7,000 to 13,000 times sweeter than sucrose. This high-intensity sweetener features the addition of a 3,3-dimethylbutyl group to the dipeptide derived from aspartic acid and phenylalanine. This modification not only enhances the sweetness of Neotame but also contributes to its thermal stability. The molecular structure of Neotame allows it to efficiently activate sweet taste receptors, providing a sugar-like sweetness without the calories. Its attributes are particularly useful in studies focused on understanding sweetness perception mechanisms and developing alternatives to traditional sweeteners.
