(−)-Sinigrin is a substrate for thioglucosidase that can be found in horseradish root and black mustard seeds. As a glucosinolate, it serves as a precursor to isothiocyanates through the enzymatic reaction mediated by myrosinase, an enzyme that is activated upon plant tissue damage, such as chewing. (−)-Sinigrin plays a role in plant defense mechanisms against pests and diseases. Its hydrolysis product, allyl isothiocyanate, acts as a natural biopesticide, deterring herbivores and inhibiting the growth of fungi and bacteria.
