Microperoxidase (MP-11) sodium salt has a proposed structure of the heme portion of the cytochrome c molecule with amino acids 11-21 still attached. This product is prepared by enzymatic degradation of equine heart cytochrome c. Low concentrations of alcohol promote the oxidation of methyl phenyl sulfide to methyl phenyl sulfoxide through the action of Microperoxidase-11, while high levels of alcohol in the solvent hinder this process.
