Methyl dodecanoate is a flavor ketone produced in a reaction biocatalyzed by microencapsulated fungal spores. Also used in production of biodiesel. Methyl dodecanoate has been used in selective synthesis of the secondary amide surfactant, N-methyl lauroylethanolamide.
