Glyceryl tristearate is a glyceride present in animal and vegetable fats that belongs to the class of organic compounds known as triacylglycerols. It is also found in human adipose tissue and primarily detected in blood. Within the cell, Glyceryl tristearate is primarily located in the membrane (predicted from logP) and adiposome. It exists in all eukaryotes, ranging from yeast to humans. Glyceryl tristearate participates in a number of enzymatic reactions. In particular, it can be biosynthesized from diacylglycerol and stearoyl-CoA, catalyzed by the enzyme diacylglycerol O-acyltransferase. The compound has a role as a plant metabolite and a Caenorhabditis elegans metabolite. In humans, Glyceryl tristearate is involved in the metabolic disorder called de novo triacylglycerol biosynthesis Glyceryl tristearate pathway. Outside of the human body, Glyceryl tristearate can be found in fig. This makes Glyceryl tristearate a potential biomarker for the consumption of this food product.
