β-Cyclodextrin is made of homogeneous cyclic alpha1,4-linked D-glucopyranose units in a seven member ring. It forms clathrates and is suitable for use with dansyl chloride to form water-soluble complexes for fluorescent labeling of proteins. β-Cyclodextrin has the capability to form inclusion complexes with various molecules. Possessing a cage-like supramolecular structure, β-Cyclodextrin features an apolar internal cavity that enables the formation of inclusion complexes with a diverse range of compounds, including fats. β-Cyclodextrin is a cyclic heptamer. Enzymatic action by cyclodextrin glycosyl transferase (CGT) on hydrolyzed starch syrups leads to its production.
