β-Amylase is an enzyme that catalyzes the hydrolysis of α-1,4-glucosidic linkages in starch, yielding maltose and some glucose. It acts at the non-reducing ends of amylose and amylopectin chains, breaking them down into smaller sugar molecules. This enzyme plays a role in the initial stages of starch digestion in plants and microorganisms. At the molecular level, β-Amylase binds to the substrate starch and cleaves the glycosidic bonds, resulting in the release of maltose and glucose.
