Pyruvic Acid Potassium Salt is an intermdiate in sugar metabolism and enzymatic carbohydrate degredation. It is converted by carboxylase into acetaldehyde and CO2. In muscle, it is reduced to lactic acid during exertion, then reoxidized and partly retransformed to glycogen upon resting. When present in culture medium, it improves coliform recovery. It may act to be involved in a mitochondrial oxidant-activated metabolic regulatory pathway. It has also been shown to be involved in plant respiratory regulation.
