Petroselinic acid is a monounsaturated omega-12 fatty acid found naturally in plant and animal oils and fats. Petroselinic acid act on several pathways, including the PPAR-γ pathway, the NF-κB pathway, and the AMPK pathway. The PPAR-γ pathway is involved in the regulation of inflammation, while the NF-κB pathway is involved in the regulation of oxidative stress. The AMPK pathway is involved in the regulation of insulin sensitivity.
