Mucic acid is a dicarboxylic acid tetrol compound. Mucic acid is a metal chelate that stimulates the metabolism of carbohydrates, fats, and proteins, playing a vital role in energy production within the body. Moreover, it exhibits protective properties against infectious diseases by activating toll-like receptor 2 (TLR2) and TLR4, key molecules involved in innate immunity. Mucic acid is also used as a fluorescence probe, facilitating the detection of polymorphonuclear leukocytes in blood samples. Its versatility extends to applications such being used to replace tartaric acid in self-rising flour. It is also used as a precursor for adipic acid in the production of nylon, and substituting potassium bitartrate in baking powder formulations.
