Sorbic acid is a naturally occurring preservative. Exhibiting a white, crystalline solid form, sorbic acid possesses a faintly acidic taste and odor. Its solubility extends to water, alcohol, and ether, while organic solvents prove largely ineffective for dissolving it. In vitro studies employ sorbic acid to investigate the impact of preservatives on the growth of bacteria, mold, and yeast. The inhibitory action of sorbic acid stems from its ability to disrupt the cell membrane of these microorganisms. By doing so, it hinders their nutrient uptake and inhibits the release of toxins, effectively impeding their growth and survival.
