Alcohol-dehydrogenase found in yeast is a vital enzyme involved in the metabolic process of alcohol. Its primary function is to facilitate the oxidation of ethanol into acetaldehyde, which subsequently undergoes conversion to acetate through the action of aldehyde dehydrogenase. Intriguingly, research has revealed an additional capability of this enzyme—its ability to inhibit the activity of GSK-3β, a protein kinase.
