3-Octenoic acid is a naturally occurring fatty acid present in mammal milk, select plants, and prominent oils like coconut and palm kernel oil. Its versatile applications span across the food industry, cosmetics, pharmaceuticals, and biotechnology. Within the food industry, it serves as a preservative and antimicrobial agent. Extensive research has explored its anti-inflammatory, anti-fungal, and antimicrobial properties in vitro. 3-octenoic acid inhibits specific enzymes and receptors involved in inflammation and infection. Additionally, it demonstrates antifungal effects by impeding fungal cell growth. Furthermore, it has been found to diminish the production of pro-inflammatory cytokines and the expression of genes associated with inflammation. Lastly, 3-octenoic acid has demonstrated the ability to impede the growth of certain types of cancer cells.
