Methyl stearate is a saturated fatty acid ester used as an emulsifier and stabilizer. It acts as a substrate for several enzymes, including lipases and esterases, which break down the ester bond and release the fatty acid and alcohol components. It has been used to study the effects of fatty acid esters on cell proliferation, cell differentiation, cell death, gene expression, protein synthesis, and enzyme activity. Methyl stearate has been found to inhibit the of the production of pro-inflammatory cytokines, stimulate the production of anti-inflammatory cytokines, and inhibit of the production of free radicals.
